Ultrasonic Food Cutter

Compared to traditional cutting methods, HCSONIC ultrasonic food cutting systems offer more clean cutting, easier cleaning of equipment, shorter downtime, better cost-effectiveness, higher consistency of the cutting surface and longer blade life. Ultrasonic food cutting blades are manufactured through a precision wire cutting process that reduces stress and extends service life.

Ultrasonic food cutting is a process utilising knives that vibrate at high frequency. Applying ultrasonic vibration to a cutting tool creates a nearly frictionless cutting surface. This low friction cutting surface can slice many food products cleanly and without smearing. Skinny slices are also possible due to the reduced resistance.

Many of the world’s largest and most prestigious food producers use ultrasonic food cutting systems. HCSONIC can fully customise OEM components and tools.

How many components do the ultrasonic food cutting system contain

An ultrasonic generator (power supply)

The ultrasonic generator converts the 110VAC or 220VAC electrical supply current into a high frequency, high voltage electrical signal.

An ultrasonic converter (transducer)

The ultrasonic converter utilises the high-frequency electrical signal from the generator and converts it into linear, mechanical movement. This conversion occurs using piezo-electric ceramic disks that expand when a voltage is applied. Ultrasonic transducers for food cutting systems are specially designed to introduce and flow air in and out of the air for cooling.

An ultrasonic booster

The ultrasonic booster is a tuned component that mechanically adjusts the amount of linear vibratory movement from the converter to the required level for the specific application to produce optimal cutting performance. The booster also provides a safe, non-vibrating location to clamp onto the cutting tools.

Boosters used in food cutting systems should be a one-piece, solid titanium design for maximum cutting accuracy and repeatability. The single-piece design allows for a thorough wash-down, unlike multi-piece ultrasonic boosters that can harbour bacteria.

An ultrasonic cutting tool (horn)

The ultrasonic cutting horn is a custom made tool that is engineered to vibrate at a specific frequency. These tools are painstakingly designed using computer modelling technology for optimum performance and longevity. Ultrasonic instruments must be tuned to match the frequency of the system. This tuning procedure requires considering the horn’s mass, length and geometry.

A material cutting system

Automated machinery is required for the proper positioning and movement of the food products and ultrasonic tools. Automation is essential to achieve the correct cutting position, direction and speed. Typically, these handling systems utilise servo drive mechanisms for precise control of the food products’ rates and functions and cutting tools.

What kinds of food can be actuated by ultrasonic food cutting systems

  • Hard and soft cheeses, including products containing pieces of nuts and fruit;
  • Sandwiches, wraps, and pizzas for catering industries;
  • Nougat, candy bars, granola bars and healthy snack bars;
  • Semi-frozen meats and fish • Bread or cake products.

Why people choose ultrasonic food cutting systems

Cleaner cutting

Cut without deformation or displacement of the internal product.

Higher consistency of the cutting surface

Outstanding cut aesthetics for multi-layered and delicate products (cakes, sandwiches, baked goods, layered cheese and pate products);

Better cost-effectiveness

Cutting speeds can be increased substantially, and smaller kerfs help reduce waste—an extensive range of products that can be cut without changing the blade.

Shorter downtime

Ultrasonic food cutting systems provide longer run times during the cleaning cycle and are easy to clean, reducing cleaning downtime by 70% to 90%.

Quality materials meet the highest food industry standards

Food cutting system is made of stainless steel and titanium to ensure improved hygiene, safety and processing performance.

Longer blade life

Ultrasonic tool blades are sharper than stationary blades, increasing productivity and reducing maintenance.

All-weather operation

HCSONIC ultrasonic food cutting systems are carefully designed and machined for high-performance operation in the harshest of machining environments.

Ultrasonic Food Cutting System tips

Ultrasonic food cutting may not be suitable for every food cutting operation. However, high-frequency vibration applied to cutting tools does provide significant benefits. Primarily, ultrasonic technology enhances the cut quality and consistency and offers the ability to slice multi-textured food products without deformation cleanly. HCSONIC can evaluate your food cutting operation’s key factors to determine if an ultrasonic knife’s low friction cutting surface might be a fit.
